Skirt Steak

Ingredients

  • 1.5 lb skirt steak
  • 0.5 cup brown sugar
  • 0.25 cup soy sauce
  • 2 tbsp mustard
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 3 cloves garlic
  • pepper

Directions

  1. Remove excess fat from skirt steak. Much can be removed by hand. One side normally has a thin "silver skin" and other fat. Use a knife to remove as much as you can.
  2. Cut skirt in half or fourths for easier handling for marinating and grilling.
  3. Add other ingredients into 8" x 8" glass pan. Whisk to combine.
  4. Place skirt steak pieces in marinate. Flip several times to coat. Place in refrigerator to marinate for up to 8 hours.
  5. Preheat a pan on the stove to medium-high heat, or preheat a gas grill to high.
  6. Remove steak and pan fry or grill for 4 minutes, turn over and pan fry or grill for another 4 minutes.
  7. Remove from heat and place on cutting board to rest for 5-8 minutes.
  8. Cut steak against the grain.
