Ingredients
- 1.5 lb skirt steak
- 0.5 cup brown sugar
- 0.25 cup soy sauce
- 2 tbsp mustard
- 2 tbsp red wine vinegar
- 3 tbsp olive oil
- 3 cloves garlic
- pepper
Directions
- Remove excess fat from skirt steak. Much can be removed by hand. One side normally has a thin "silver skin" and other fat. Use a knife to remove as much as you can.
- Cut skirt in half or fourths for easier handling for marinating and grilling.
- Add other ingredients into 8" x 8" glass pan. Whisk to combine.
- Place skirt steak pieces in marinate. Flip several times to coat. Place in refrigerator to marinate for up to 8 hours.
- Preheat a pan on the stove to medium-high heat, or preheat a gas grill to high.
- Remove steak and pan fry or grill for 4 minutes, turn over and pan fry or grill for another 4 minutes.
- Remove from heat and place on cutting board to rest for 5-8 minutes.
- Cut steak against the grain.
